WOW! Cauliflower Pizza Crust !! Yum!
Easy and delicious! I used pesto on the crust and then loaded it up with vegies. I used a little cheese in the crust to make sure it came out crispy, but I didn't put cheese on top.
To make cauliflower rice: boil cut up cauliflower, drain, put in food processor till it looks like rice!
I use pesto with no nuts, or use low carb tomato sauce.

I'm going to try replacing the cheese with an extra egg and a little olive oil (I'll let you all know how it goes). As a topping I'm using grass-fed top pot roast that I made with an onion and wine sauce (no cream, butter, or anything else against the rules). So the flavor will come from the pot roast "Gravy" and then I'll top it all off with a bunch of vegetables, like spinach, broccoli, etc.

I just stumbled across this half an hour ago and I immediately ran to the store to buy extra cauliflower
I'm boiling it now to soften it, can't wait! I'll post again in a few hours to say how it came out!

I've made the pizza crust without any cheese and it was just fine. Not quite as crunchy and a little floppy but still very tasty. I also used a little bit of cottage cheese as a topping because pizza isn't pizza without cheese. mushrooms, artichoke, asparagus, and chicken also go well with it.

Careful with this one. I gained a lot of weight eating cauliflower pizzas when I was low carbing. In the original recipe there is a LOT of cheese in it and slow carbing doesn't use a lot of cheese. There are CARBS in cheese.
Anything that seems too good to be true, likely is. Stick to the book.

This looks delicious! I'm looking forward to trying it! However, I really would love to try to put some sort of SCD approved spinach, artichoke, chicken concoction on it, but most recipes I'm finding for that include cream cheese or sour cream. Do you think that cottage cheese is an OK substitute? And for that matter, are artichokes allowed?

I made this last night with feta instead of mozzarella. I used bell peppers, onions, natural marinara, and chicken as the topping.
It did not taste anything like pizza to me, but was edible none the less. Crust came out crispy around the edges, and had a pita bread like texture in the center. It was great for a change of pace from meat/beans/veg.

I decided to try my hand at this today. I altered the recipe a bit though:
1 cup riced cauliflower
2 eggs
2 Tbsp coconut flour
Organic pizza seasoning (Grew the herbs myself)
I spread it out in a pan coated with Pam Olive Oil Spray and baked it for 12 minutes at 450F. Put a few spoons of a SCD-compliant pasta sauce I found on there with some turkey pepperoni. It's freaking delicious. I have some of that Veggie Slices (I know,soy...) cheese that I sprinkled on top too. Just a tad. I'm not a huge cheese fan. Then I baked for another 5 minutes at 450F. Came out great. I'm glad you posted that recipe.
