Quinoa vs Buckwheat?
I've been recently researching both quinoa and buckwheat and I am curious to know what peoples' experiences have been like with either one or both?
I have just begun fasting, doing a 4-6 condensed eating window 5 times a week. And my goal is to eat overall healthy whether I'm fasting or not and as a person who LOVES pasta and bread, I'm looking at healthier alternatives, which is how I came across quinoa and buckwheat. I absolutely love spaghetti squash so I am aware that that's a great alternative but I am curious to know more about these items.

I love quinoa. Make sure you rinse it before boiling it, or you'll get white fluffy stuff (ok to eat, but doesn't look appetizing). Boil quinoa for 8 minutes, and it will be cooked perfectly.
Here's a dish I used to make before SCD:
1 can Black Beans
2 ears fresh Corn
1/2 cup Red Onion
1/8 cup fresh Cilantro, chopped
1 large Tomato, cut into medium-size pieces
1 clove Garlic, minced
2 tsp Cumin
3 tbsp Lime Juice
1 cup dry Quinoa
Rinse quinoa thoroughly in fine mesh strainer. Boil quinoa for 8 minutes.
Cut corn off cobs. Briefly heat canola oil in large frying pan, and add all ingredients. Do not overcook (I like the corn to be a bit crunchy still). Serve over quinoa or mixed with quinoa.
