Protein Pudding

Recently I have been trying to integrate avocados into my diet. I know they have a lot of fat but most of it is mono or polyunsaturated fat, so it's still quite healthy when eaten in moderation. The other day I mixed half a avacado into my protein shake and surprinsingly it got a pudding like consistency and it tasted realy good, so I thought I would share it here.

1 cup of low-fat milk (1%)

2-3 tablespoons casein protein powder

1/2 peeled avocado

I know milk is not allowed during SCD, but I've loosen the diet a bit since I'm now < 12% body fat. You can also use soy milk instead of normal milk. Also, if you are afraid of the carbs most flavored protein powders have, you can use unflavored protein powder and then add some vanilla or cinamon. Depending on the consistency you want you can add more milk if it's to thick or more avocado if it's to thin.

You can also mix in some coconut oil/flour or almond flour to get variation into it.

I have a Protein Pudding recipe that uses no milk and it kicks MAJOR A*S! I used to be a protein powder junkie but am cutting down to using it only in emergency food situations and even then trying to keep it to post workout but if you are ok with using protein powder and don't stall from it then you NEED to try this!

Black Forest Cake Mousse

Ingredients

3 scoops Chocolate Protein Powder (sugar free or can use vanilla and add cocoa and stevia)

Sugar-free Cherry flavored JELL-O Powder

1 cup boiled water

1 cup ice

1 tablespoon cocoa powder

Preparation

1. Add packet of JELL-O to 1 cup of boiling water according to package directions.

2. Blend mixed JELL-O with ice in blender. (turn blender off, put ice in, THEN close lid lol...I had a bit of a disaster)

3. Add 3 scoops protein powder and blend well.

4. Pour into smaller containers, and place in the fridge.

5. Let stand in fridge for 1 or 2 hours.

6. Enjoy!

Seriously, delicious. I don't *think* I am being one of those people who has been eating healthy for so long that weird stuff tastes good...but then, maybe I am lol. Try it out and let me know what you think :D

    This looks totally delicious and dangerous...I think I'll try it as soon as I lose the bf I just gained from too many avocados & almonds!

    Heehee. Just having it in my fridge is almost too much for my addict brain lol. I just made it for my husband with regular plain knox gelatin and it is quite delicious.
