Two Slow Carb Chicken Recipes
I've been on the Slow Carb Diet for 6 weeks and have dropped 12 lbs so far.
I wanted to share two recipes that I've enjoyed, feel free to critique them if you think they are breaking the rules!
These are spicy chicken strips that are crunchy and seem almost breaded.
If you are from the south, you know what Tony's is.
I'm from Iowa and only discovered it recently since my friend married a southern gal.
It is fairly high in sodium, but has no sugar and no carbs.
Take a a boneless chicken breast and "filet" into thinner than 1/2" thick slices.
Cover liberally with Tony's spice.
Place in a frying pan on Medium-High heat.
Cook 2-3 minutes per side until the chicken is cooked all the way through (slice them thin!)
I've used a well-seasoned cast iron skillet and a non-stick pan.
The chicken sticks to the pan a little, but it makes some spicy, delicious chicken.
Chicken Onion Curry
This recipe is easily scaled. Just use the same number of chicken breasts to onions. (i.e. 3 chicken breasts and 3 onions).
You will also need curry powder and garlic chili oil.
Cut chicken into small cubes and the onions into strips.
Put 1-2 tbs of oil into a large non-stick pan.
Cook onions on high until they just start to get translucent.
Add chicken and cook until chicken is completely white.
Add 2 tbs curry powder and 2 tbs garlic chili oil (more or less of both to taste), stir until completely mixed in.
Reduce heat to medium, cover with a lid, and cook for 5 more minutes, stirring occasionally.
