Meatball Soup
Hi all,
Made this last night, and thought I'd share.
Using the beans to hold the balls together seems to have worked...so, here we go.
All measurements are in approximations...
INGREDIENTS
Meatballs
500 grams of extra-lean ground beef
i can of beans (I used white beans this time)
1-2 carrots
half an onion
2 cloves garlic
2 eggs
steak spice (or any spice really)
Optional - 4 slices of diced bacon...i used this option by the way
Soup
8 cups of water
Beef + Veggie Broth to taste
1-2 carrots
2-3 cups of frozen mixed veggies
INSTRUCTIONS
Add veggies to the broth water
Bring the water to a boil, let it simmer
Meanwhile...
Preheat oven to 450
Blend all the meatball ingredients except the meat/bacon in a food processor
Once done, add this to the to meat, and form about 16 meatballs
Transfer to oven
Bake for 30 minutes, but it's a good idea to move them around once or twice so they don't stick
Once the soup has boiled for 20 minutes, I removed it, so that I could blend it (for the kids)
If you like chunky soup, keep it chunky 
Remove balls, put soup in bowls, add 2-3 meatballs to bowl
Eat
