Just use chili powder, ground cumin, onion powder or flakes, garlic powder or garlic salt, and some cayenne pepper. I like crumbling some chipotle-flavored bouillon cube into mexican meats too. I find them in the Hispanic foods aisle at Shop N Save. (I'm in St Louis). I'd say for a lb of ground beef or turkey, use about 2-3 Tblsp chili powder, 1 Tblsp cumin, 1 tsp onion powder and a hafl tsp garlic powder maybe and maybe an 1/8 to 1/4 tsp of cayenne.. And if you have tomato paste, squeeze about a Tblsp into the mix (I buy the kind in a tube from Whole Foods; no added sugars).

If you have fresh or dehydrated bell peppers and like those, you can add some of that. And/or jalapeno.

I don't ever measure things when I cook, so I'm sorry I can't be more precise for you, but these are the flavors you'd need for a good taco meat or chili. If it seems too dry, add a bit of salsa to the mix.

    PS -- I often dump some of this type of taco meat onto a big pile of shredded lettuce, chopped green onion and tomato, some black beans, and avocado if I have it and I have a very yummy and SCD approved taco salad.

a while back, i made this recipe for spicy lentil taco "meat". Of course, if you want to use ground beef, you can do that. But since us SCD are big on Lentils, this might be nice for you as well. This was done before I was on SCD so it has cheese, and sour cream and tortillas. I think that you'd like this recipe if you are doing lentils for breakfast but tired of the boring bland flavor of lentils.
