How to fit Chipotle in this diet?

I could be missing something, but it seems like there's a contradiction between the slow carb diet and the Chipotle diet. All the mentions of the Chipotle diet have cheese and sour cream - supposed no-no's on slow carb. Can anyone offer some insights? thanks.

i do follow the SCD but i keep on thinking of snacks, especially 2 hours after dinner i just want to have something in my mouth, i'm not hungry but i just WANT to eat not NEED to eat. is it okay to snack? or is it better nor to? if it is better not to how do you stop yourself from snacking? thanks
